Dark Chocolate Cherry Crisp: Plant Based and Gluten Free!

It's cherry picking season! What does that mean? An abundance of cherries.

Last fall, we went hard on the whole extra-apples-in-the-kitchen-theme, and brought you loads of apple recipes! This summer, we're kind of in the same boat with cherries. 

Check out this no-sugar-added recipe for a dark chocolate cherry crisp below! Not only is gluten free, but it's also totally plant based and vegan!

Not only is it vegan and completely plant based, but also gluten/grain free!

INGREDIENTS:

FRUIT:

  • 1 cup sliced fresh cherries
  • 1 teaspoon tapioca starch
  • 1/4 teaspoon stevia
  • Pinch of salt
  • 1/4 cup chopped dark chocolate

CRISP TOPPING:

  • 1/3 cup gluten free oats
  • 1/3 cup almond flour
  • 1/4 cup tapioca starch
  • Pinch of salt
  • 1/4 teaspoon stevia
  • 1 tablespoon solid coconut oil

DIRECTIONS:

  • Preheat the oven to 350F, and grease a ramekin with coconut oil
  • In a small bowl, combine all the ingredients for the fruit portion of the crisp, tossing well. Let sit for about 5 minutes
  • While the fruit is sitting, prepare the crisp. Combine all ingredients except the coconut oil and stir well. Then, add in the tablespoon of cold coconut oil, breaking it up as you would butter. 
  • Pour the fruit into the greased ramekin, and then add the crisp topping over it. 
  • Bake for 35 minutes, until the crisp is hot and bubbly
  • Let cool for about 5 minutes, add 1 scoop of Dark Chocolate, and enjoy!!
