Gluten Free, Keto, and Vegan Mini Muffins!

When Gabe and I were getting married, the only thing that I didn't register for that I really, really wanted was a mini muffin tin. Making mini muffins just sounds so adorable! When we finally got this gorgeous piece of bakeware, I couldn't wait to make some really health-i-fied, gluten free/keto mini muffins to nosh on!

 

INGREDIENTS:

  • 2 cups almond flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup coconut oil, melted
  • 1/4 teaspoon stevia
  • 3 flax eggs - 3 tablespoons flaxseed mixed with 6 tablespoons water.
  • 1 teaspoon vanilla extract

DIRECTIONS:

  • Preheat oven to 350F
  • In a large bowl, whisk together the almond flour, salt, and baking soda
  • Add in the coconut oil, flax, stevia, and vanilla and combine
  • Spoon evenly into a mini muffin tin, and bake for 18-20 minutes

Serving Size - 1 scoop Wink + 1 ball. Recipe makes 24 servings
