These morsels were so great! Like the Chocolate Chunk cookies we posted a couple of weeks ago, this recipe is based off Rachael DeVaux's Cookie Skillet Individuals. They came out so moist, fluffy, and delicious. Most importantly, they tasted like fall!

Keto Pecan Pumpkin Spice Cookies with Iced Latte Wink

INGREDIENTS:

  • 1 egg
  • 1/4 cup melted coconut oil
  • 1/3 cup cashew butter or almond butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon non-dairy milk
  • 1/4 teaspoon stevia
  • 1.25 cups almond flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 teaspoon Pumpkin Pie spice
  • 1/4 cup chopped pecans

DIRECTIONS:

  • Preheat oven to 350F
  • In a large bowl, whisk the egg
  • Add in the coconut oil, nut butter, vanilla extract, non-dairy milk, and stevia, making sure to mix very well
  • Once well combined, add in the almond flour, baking soda, 1/8th teaspoon sea salt, and pumpkin pie spice and mix well.
  • Lastly, mix in the pecans.
  • Scoop onto a greased baking sheet (1 tablespoon-sized, should make 15 cookies). Sprinkle with remaining salt.
  • Bake for about 12 minutes
  • Let cool & enjoy!!
