Pumpkin Donuts: GF, Keto and Vegan!

Ahh, yet another donut recipe. Since everyone loved the Chocolate Keto donuts so much, we decided to simply put a fall spin on them this season and make Pumpkin Spice Donuts. These donuts are slightly different than our previous version, since they're entirely vegan. They are still super low in carbs and keto-friendly!

These are super decadent and, as I've mentioned before, are amazing with a piping hot cup of Pumpkin Spice coffee/latte. #balancedbreakfast

Without further ado, here's the recipe:



  • 2 tablespoons ground chia seeds
  • 1 cup almond flour
  • ¼ cup coconut flour
  • 1 teaspoon baking soda
  • Salt
  • ¼ teaspoon stevia
  • 2 tablespoons melted coconut oil
  • ½ cup almond milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons pumpkin puree
  • 2 tablespoons pumpkin pie spice


  • 1 cup soaked cashews
  • 2 tablespoons melted coconut oil
  • ¼ teaspoon stevia
  • 2 teaspoons vanilla extract
  • 2 tablespoons pumpkin puree
  • 1 teaspoon pumpkin pie spice



  • Preheat the oven to 350F. Spray a donut pan with coconut oil spray
  • In a small bowl, make 2 chia eggs by mixing the ground chia seeds with 6 tablespoons water. Set aside.
  • In a large bowl, sift together the almond flour, coconut flour, baking soda, salt, stevia, and pumpkin pie spice
  • In a separate bowl, whisk together the set chia eggs, coconut oil, almond milk, vanilla extract, and pumpkin puree.
  • Once the wet ingredients are well mixed, mix the wet and dry together, and mix well. The batter will be quite thick.
  • Scoop batter into the donut pan and bake for 15-20 minutes.



  • While the donuts are baking, make the frosting by putting all the ingredients into a high-powered blender and blending until smooth!


  • Frost the donuts with the pumpkin frosting, and serve with a couple scoops of Cinnamon Bun Wink!
